The Chambourcin grape produces a deep red wine with an aromatic flavor with no unpleasant hybrid flavors. Chambourcin is perhaps the most successful French hybrids and is certainly the most widespread in Australia.
Description
The grape is particularly resistant to fungal diseases, so it is more comfortable in the wettest areas of the NSW coast.
Usually has a moderate level of residual sugar, which gives it a nice sweet flavor, but not overbearing. The wine is generally medium in body and have a good length of palate and will oak and age very well.
Chambourcin wines are recommended for serving with dark chocolate (or a dessert made of chocolate), because the flavors of wine and chocolate melt in an exceptional way.
Chambourcin”s generous, full flavours make it excellent for dishes that would traditionally be partnered by red wine. Such as beef, lamb, and red-sauced pasta while its relatively low tannins makes it one of the few red varieties that can successfully be used as an accompaniment to seafood.
